Minced Beef Hash with Creamy Avocado Dip

For a speedy, midweek supper full of protein and healthy fats, this Minced Beef Hash is ideal.  You can eat it on its own or serve on brown rice, quinoa or brown pasta. Its also nice with a side helping of fresh, crunchy salad.

Minced beef is a good source of protein, niacin and Vitamin B12 which are important for blood circulation and healthy red blood cells.

If you have any leftovers then it is really nice in an ommlette for breakfast, it can be easily reheated for dinner the next day or it can be frozen.

I happened to have some left over fresh chives and parsley from my Grain Free Tuna and Courgette Fritters with Creamy Avocado Dip and my Spicy Chicken Wraps with a Cooling Avocado Cream so threw them in a well.

Minced Beef Hash with Creamy Avocado Dip (serves 2)

Ingredients

  • 250 gr minced beef
  • 1 clove garlic finely diced or 1 tsp lazy garlic
  • 1 red pepper diced
  • 1 handful of kale
  • 1 tblsp cooking oil of your choice
  • 2 tblsp tomato puree
  • 2 tblsp smoked paprika
  • 1 tsp mixed dried herbs
  • Salt and pepper to taste
  • 1 dollop Delicious Creamy Avocado Dip

Method

  1. Heat the oil in a frying or saute pan
  2. Add the garlic and peppers and fry until just beginning to soften
  3. Add the minced beef and brown
  4. Add the kale, tomato puree, smoked paprika, mixed herbs and seasoning
  5. Cook for a futher 3-4 minute
  6. Serve with a dollop of Delicious Creamy Avocado Dip on the top

Adaptations

Snip 12 Serve with brown rice, quinoa or brown pasta

Snip 11 Use lean mince and omit the avo

Snip 9Use as high a fat mince as you can find and fry in coconut oil

Snip 13 Omit the beef and use a mix of stir fry vegetable instead left over courgette and aubergine would work here or use diced tofu.

Snip 2Have the Avocado Dip already made up in the fridge. Use lazy garlic and I believe you can buy ready diced peppers either fresh or frozen but haven’t used them
